Could black rice be a newly rediscovered “superfood?” Researchers at the Louisiana State University seem to think so.

After analyzing samples of bran from black rice, food scientists at Louisiana State University found raised levels of anthocyanins, powerful, health-promoting antioxidants. Anthocyanins provide the dark colors of many fruits and vegetables, such as blueberries and blackberries. They are what make black rice “black.”

“Just a spoonful of black rice bran contains more health-promoting anthocyanin antioxidants than are found in a spoonful of blueberries, but with less sugar, and more fiber and vitamin E antioxidants,” said lead research Dr. Zhimin Xu in a paper presented in late August at the 240th National Meeting of the American Chemical Society in Boston.

“If berries are used to boost health, why not black rice and black rice bran? Especially, black rice bran would be a unique and economical material to increase consumption of health-promoting antioxidants,” added Dr. Xu.

Centuries ago black rice was known as “Forbidden Rice” in ancient China because only nobles were allowed to eat it.

Researchers have found a strong link between Attention Deficit Disorder (ADHD) in children and exposure to commonly used pesticides on fruits and vegetables. Eating organic foods, however, has been found to virtually eliminate any sign of exposure to organophosphate pesticides among school-age children.

In a study published in June 2010 in the respected peer-reviewed journal Pediatrics that followed 1,139 children along with interviews with parents, a group of researchers at the Harvard School of Public Health and elsewhere found a strong link between children’s Attention Deficit Disorder and exposure to commonly used pesticides on fruits and vegetables. The researchers found toxic, synthetic organophosphate pesticide residues in the urine of 94% of the kids tested.

According to Dr. Alex Lu, also of the Harvard School of Public Health and formerly with Emory University, the average child in America is exposed to 10 to 13 pesticides daily in their food and drinking water.

Yet, switching to an organic diet for just five days virtually eliminates any sign of exposure to organophosphate insecticides among school-age children.

In Dr. Lu’s study, the urine and saliva of 21 school-age children, ages 3-11, tested positive for residues of organophosphate insecticides, including malathion and chlorpyrifos, commonly used in conventional farming and gardening. However, within 8 to 36 hours of switching to an organic diet, no residues were detected. A distinct peak in pesticide residue levels in the children was noted in winter months due to the increased volume of imported fruits and vegetables during the winter, according to Dr. Lu.

“The transformation is extremely rapid,” Dr. Lu told the Seattle Post Intelligencer when the study was published. “Once you switch from conventional food to organic, the pesticides…in the urine disappear. The level returns immediately when you go back to the conventional diets.”

Edward & Sons Trading Company’s Founder and President Joel Dee recently wrote the following commentary regarding GMOs in food to clarify the company’s concern regarding the rapid, widespread infiltration of Genetically Modified Organisms in the food and agriculture system—and what organic food companies and health-aware consumers can do about it.

According to the Institute for Responsible Technology, “Genetically Modified Organisms  (GMOs) are the result of laboratory processes which artificially insert foreign genes into the DNA of food crops or animals. Those genes may come from bacteria, viruses, insects, animals or even humans. Although banned by food manufacturers in Europe and elsewhere, the FDA does not require any safety evaluations. Most Americans say they would not eat GMOs if labeled, but the U.S. does not require labeling.”

Further, the Institute states, ” GMOs are not safe, but have been in the food supply since 1996 and are now present in the vast majority of processed foods in the US.”

Edward & Sons Trading Company, Inc. is alarmed over the proliferation of GMOs into the world’s food supply. While we have no certain knowledge that GMOs or GE (“Genetically Engineered”) food is harmful to consume, neither do we blindly accept the safety assurances of its supporters. Our evaluation of safety claims must take into account the vast sums of money the sponsors of GE food have to gain by its acceptance.

Put it on the Label: The Consumer’s Right to Know

We are outraged that our FDA does not require consumer labeling of packaged products or produce that knowingly rely upon genetically engineered seeds or ingredients. We believe that consumers deserve to be able to make their own choices regarding the suitability of GE foods in their diets. This is especially important to those who are allergic to certain foods, because GE food from one food group will often contain the genetic material from another (potentially allergy causing) food group. It is the practice known as transgenics, where scientists splice genes from different species together (sometimes even combining a gene from an animal into a plant) that we find to be most disturbing, and most likely to have unintended consequences in the future.

Additionally, we are suspicious of the speed with which GE food has swept through the world’s food supplies. And, we are alarmed by the threat to heritage varieties and other non-GE crops posed by unintended cross-pollination from GE crops.

Edward & Sons seeks careful, peer-reviewed, scientific evaluation of the safety of each GE crop before regulators permit it to be grown outdoors. According to the Union of Concerned Scientists, “Because of the USDA’s weak regulation of field tests of GE crops, contamination of food with unapproved varieties may be occurring on a large scale without anyone knowing about it. A 2005 report by the USDA’s inspector general found that weaknesses in USDA regulations, including those for pharma crops, increase the risk that unapproved GE varieties will escape into the environment and the food supply.”

Aside from introducing potential risk to the US food supply, such contamination costs hundreds of millions of dollars to American exporters who service GE-wary European and Asian trading partners. Furthermore, since certain GE crops have been designed to be resistant to broad range herbicides, the resulting large-scale herbicide application on GE cropland endangers the biodiversity that would otherwise thrive on those lands.

Curried Coconut Beggars Purses

Serves 6 to 8

2 tablespoons sesame oil

4 cloves finely minced garlic

2 tablespoons ginger, finely chopped

4 scallions, finely chopped

1/2 cup finely diced carrots

1/2 cup finely diced green bell peppers

1/2 cup finely diced red bell peppers

1 bay leaf

1 pound seitan, cut into small strips

1 cup white wine

1 can coconut milk (Native Forest® canned Organic Coconut Milk)

1/2 cup chopped fresh cilantro

4 fresh basil leaves, finely chopped

1 teaspoon sea salt

Pinch cayenne pepper

1/4 cup finely chopped fresh chives

8 sheets of phyllo dough, defrosted if frozen

Olive oil for brushing

1.  Preheat the oven to 350°F.

2.  Heat the sesame oil in a large sauté pan over medium heat. Cook the garlic, ginger, scallions, carrots, peppers and bay leaf over medium heat for 5 minutes. Add the seitan strips, white wine, and coconut milk to the mixture and cook for 5-6 minutes. Add the cilantro, basil, salt, cayenne pepper and chives and continue cooking, stirring occasionally, for 20 minutes. Remove the bay leaf and set aside to cool.

3.  Take one sheet of phyllo dough and fold it in half lengthwise. Brush with a bit of olive oil. Place 1/2 cup of the filling into the center of the phyllo sheet. Twist the dough with a piece of string so that it gathers to make a bundle, or “purse”. Repeat with the remaining dough, oil and filling to make 6-8 purses.

4.  Place the purses on a baking sheet and bake for 20 minutes, until golden brown. Serve at once.

Strawberry-Mangosteen Margarita

1 small piece of preserved lemon (muddled)

½ oz mangosteen juice (Native Forest® canned Organic Mangosteen)

½ oz strawberry puree

1oz fresh lemon juice

1 oz agave syrup

3 oz sake

1 whole mangosteen

Shake all ingredients together. Fill cocktail glass with ice. Strain over ice. Garnish with the whole mangosteen. Imbibe responsibly and enjoy!

They used their winnings, along with a small investment from family, friends and loyal customers, to open their first restaurant, Candle Cafe.

With the success of Candle Cafe, a second restaurant, Candle 79, was opened in 2003 just five blocks away from Candle Cafe in New York’s Upper East Side. Candle 79 has twice been rated as Zagat’s #1 Vegetarian Restaurant.

With temperatures and humidity in the high 90s, it was brutally hot in New York City this past weekend. But that didn’t stop thousands of visitors from attending the 56th Annual Fancy Foods Show held at the Jacob Javitz Center in Manhattan. With more than 2,500 exhibitors from over 80 countries, it is the world’s largest exhibition of gourmet and specialty foods.

And many of those hot and tired visitors stopped by the Edward & Sons Trading Co. exhibit booth to re-energize and quench their thirst with one of the world’s only organic coconut waters. A new product sold under the Nature Factor brand, Edward & Sons’ Organic Coconut Water is made from young organic coconuts. A hot trend in natural foods, coconut water is Mother Nature’s isotonic beverage, high in potassium and magnesium and replacing key electrolytes lost through perspiration and activity—something that was definitely needed to revitalize during the weekend’s steamy heat. And Edward & Sons proudly sampled the world’s only shelf-stable organic coconut water on the market!

Interest in natural, organic, vegan and gluten free products was high among fancy food buyers from Brooklyn to Singapore, and the Edward & Sons sales team was non-stop busy at the exhibit booth all three days of the show. Owners Joel Dee and Alison Cox and general manager Dean Soicher were joined by team members Matthew Koch and Steve Hoffman to answer questions from trade visitors, highlight new products, and demonstrate the benefits of Edward & Sons’ catalog of natural, organic, vegan and gluten free products.

At Edward & Sons we believe that everybody is different and every body has different needs, a point that is often overlooked by conventional food companies who cater solely to “mainstream” customers. We shun artificial ingredients and preservatives. We prefer simple, wholesome, minimally processed ingredients crafted by artisans to achieve great taste without artificial enhancements. Since any ingredient may present a problem for someone, we select each ingredient with care, ever mindful of our most sensitive customers. As such, you will find our products on the “approved” lists of many dietary associations, weight loss organizations, and food allergy groups. Edward & Sons’ items may be enjoyed by those whose diets are guided by religion or philosophy, such as Kosher observers, Seventh Day Adventists, and vegans, as well as those who employ diet as a tool to manage health issues, including celiac sprue, candida albicans, autism, ADHD, soy or lactose intolerance.

VEGETARIANISM

Vegetarianism is a philosophy and dietary choice that avoids the animal kingdom as a source of nourishment. The reasons people choose to be/become vegetarians are enormously varied, encompassing religious beliefs, ecological commitments, compassion towards animals and personal health.

People describing themselves as vegetarian come from all walks of life and can be found in every country of the world. Edward & Sons is a vegetarian company, which means all of our products are vegetarian. Although some self-described vegetarians will eat chicken or fish, Edward & Sons products never contain either of these. Vegans are vegetarians who do not eat any animal by-products such as milk, cheese or honey. For a complete list of animal ingredients that are not suitable in a vegan product, click here.

Many of Edward & Sons products are suitable for vegans, and we have developed a vegan icon that we have begun affixing to the front of the packaging of vegan-acceptable products. This “at-a-glance” icon can be important not only to vegans. Many kosher, lactose-intolerant and other consumers will also benefit from this tool. Since this is a new tool of ours, some vegan-acceptable Edward & Sons products do not yet sport this icon. Please be sure to read our ingredients panels to determine if any product meets your needs. Our pioneering use of a vegan icon has caught the attention of many manufacturers and retailers. As a consumer service, we are making our icon available to others who sign an agreement with us to abide by vegan guidelines. ORGANIC

The organic agriculture movement has exploded in global awareness and growth over the past decade. There are many reasons why we believe businesses and consumers would be wise to insist upon certified organic products. Organic farming is a sustainable system of agriculture that respects biodiversity, returns nourishment to the soil, conserves water resources and co-exists harmoniously with the rhythms of the natural world. Certain factions within industry and government would like us to believe that residual pesticides and genetically modified DNA, commonly found in conventionally grown and processed foods, are perfectly safe to eat. We do not share that point of view. If consumers wish to avoid those substances, selecting organic foods is the surest way to do so.

The US Department of Agriculture has established a standard for certified organic foods under its National Organic Program (NOP). Edward & Sons Trading Company, Inc. is third-party certified as an organic handler under this program by Quality Assurance International (QAI).

GLUTEN FREE Our Gluten-Free criteria specify/criterion specifies that the factory use no ingredients known to contain gluten in our gluten-free recipes. Furthermore, we randomly test for the presence of gluten in finished products and find none detectable. Our tests are performed at an independent laboratory and the tests are sensitive to 5 ppm (5 parts per million) of gluten. Please understand that our tests cannot detect amounts of gluten that may be present in concentrations under 5 parts per million.

GENETICALLY ENGINEERED FOOD

Edward & Sons Trading Company, Inc. is alarmed over the proliferation of genetically engineered (GE) food (also known as “genetically modified organisms” or “GMO”s) into the world’s food supply (see http://www.ucsusa.org/food_and_ agriculture/science_
and_impacts/impacts_ genetic_engineering/impacts-of-genetic.html ).

While we have no certain knowledge that GE food is harmful to consume, neither do we blindly accept the safety assurances of its supporters, especially in view of the vast sums of money the sponsors of GE food have to gain by it’s acceptance. In contrast to current public policy, we seek careful, peer-reviewed scientific evaluation of the safety of each GE crop before regulators permit it to be grown outdoors.

We are outraged that our FDA does not require consumer labeling of packaged products or produce that knowingly rely upon genetically engineered seeds or ingredients. We believe that consumers deserve to be able to make their own choices regarding the suitability of GE foods in their diets. This is especially important to those who are allergic to certain foods, because GE food from one food group may possibly contain the genetic material from another (potentially allergy causing) food group. It is the practice known as transgenics, where scientists splice genes from different species together (sometimes even combining a gene from an animal into a plant) that we find to be most disturbing, and most likely to have unintended consequences in the future. We are suspicious of the speed with which GE food has swept through the world’s food supplies. We are especially concerned with the threat to heritage strains and other non-GE crops posed by wind drift and cross-pollination from GE crops. This unintentional contamination of food stocks is a serious problem. According to the Union of Concerned Scientists: “because of the USDA’s weak regulation of field tests of GE crops, contamination of food with unapproved varieties may be occurring on a large scale without anyone knowing about it…A 2005 report by the USDA’s inspector general (pdf) found that weaknesses in USDA regulations, including those for pharma crops, increase the risk that unapproved GE varieties will escape into the environment and the food supply.”

Aside from introducing potential risk to the USA food supply, such contamination costs hundreds of millions of dollars to American exporters who service GE-wary European and Asian trading partners. Furthermore, since certain GE crops have been designed to be resistant to broad range herbicides, the resulting large-scale herbicide application on GE cropland endangers the biodiversity that would otherwise thrive there.

As suppliers of consumer packaged products to the health aware marketplace, Edward & Sons Trading Company, Inc. faces many of the same challenges that our consumers face in our effort to avoid GE ingredients. We cannot always be certain that conventional ingredients supplied to us are non-GE. We have informed all our suppliers that we desire to buy only non-GE products from them and, therefore, instruct them to disclose any ingredients that they know to contain genetically engineered components. We secure affidavits of genetic integrity from scores of ingredient suppliers and we test those materials we conclude to be at greatest risk of genetic tampering. Still, the present U.S. regulatory climate does not allow us to be absolutely certain that even these efforts are sufficient to ensure a consistent supply of non-GE ingredients.

Edward & Sons Trading Company, Inc. is active in worldwide natural and organic food markets. We commonly source raw materials and finished products throughout the globe. It is noteworthy that many countries in Europe & Asia have loudly denounced trade practices that might infiltrate their food supplies with genetically engineered organisms. We think that the USA and Canada would be wise to similarly protect our food supplies.

Fortunately, the worldwide organic agricultural movement has made clear its repudiation of genetically engineered foods. Therefore, we conclude that third-party certified organic products, especially those from European suppliers, provide all of us with the highest degree of certainty that a product is free of genetically engineered ingredients. Edward & Sons Trading Company, Inc. offers many such products and urges consumers to opt for organic choices when available.

We are a vegetarian company, which means that all of our products are meat-free. Most are also vegan, free from dairy, eggs and honey as well. Our natural items rely on minimal processing of simple, wholesome ingredients and avoid all artificial additives or preservatives. They offer delicious and welcome alternatives to conventional snacks and groceries. Our products are suitable for a wide range of food sensitivities and special diets, including Feingold, Candida, Gluten-Free, Kosher, Macrobiotic and more.
